Quinoa and Chickpea Salad


  • 1/2 cup cooked quinoa
  • 1/2 cup canned chickpeas, drained and rinsed
  • 1/4 cup cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped
  • Feta cheese (optional)
  • Olive oil, lemon juice, salt, and pepper for dressing


  1. In a bowl, combine quinoa, chickpeas, cucumber, tomatoes, and parsley. Drizzle with olive oil and lemon juice.
  2. Season with salt and pepper.
  3. Top with feta cheese if desired
